My favourite breakfast – Chia Seeds

My favourite breakfast at the moment is Chia Seed Pudding. It is perfect for someone like me who is a little sensitive to taste in the mornings and have various food intolerances. It is super easy to prepare and full of nutrients.

Ingredients for one person

2 tablespoons of Chia Seeds

1-2 cups of coconut milk (or any milk of your choice: cows, hempseed, almond… I like the sweetness of coconut)

Optional add: a tiny pinch of salt, vanilla and syrup. I also add goji berries and raisons.

Or in winter add cinnamon and fresh ginger for some warmth.

Mix together in a bowl so the seeds are all covered. Leave a few hours or overnight.

When ready to eat stir the seeds again as they can stick together at the bottom of your bowl.

In winter and when its cold I warm up this mixture in a pan before eating.

Add seasonal fruits and berries or perhaps some crunched nuts and seeds. My current favourites are passion fruits and blueberries.

For additional power and immune boost I add Maca and Baobab powder in the pudding too.

Super healthy, tasty and easy to digest breakfast (or pudding anytime!).
